Banana Mini-Chip Muffins

Your family will love these yummy Banana Mini-Chip Muffins. Great flavors and fun to make, too.

Ingredients:

2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

3/4 cup (1 1/2 sticks) light butter softened

1/3 cup SPLENDA® Sugar Blend for Baking

1/3 cup packed SPLENDA® Brown Sugar Blend

1 teaspoon vanilla extract

3 medium ripe bananas mashed

1 large egg

2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels

Directions:

PREHEAT oven to 350° F. Grease 48 mini-muffin cups. COMBINE flour, baking powder and salt in medium bowl. Beat butter, SPLENDA® Sugar Blend for Baking, SPLENDA® Brown Sugar Blend and vanilla extract in large mixer bowl until creamy. Beat in bananas and egg. Gradually beat in flour mixture; stir in morsels. Spoon batter evenly into prepared cups, filling 2/3 full. BAKE for 15 to 20 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes in pans on wire rack. Remove to wire rack to cool completely.

I made these for a group of high school kids. They loved them, but I would like them better if I used only 1/2 bag of mini chips. Too much chocolate and not enough banana taste. But a recipe to keep.

I made these muffins with just a couple of changes. I used only two bananas (that I had frozen a couple of weeks earlier), and I used 1/2 cup margarine, and 1/4 cup butter flavor shortening. I didn't use an entire bag of the mini chips, but almost!! I used the white sugar Splenda, but only had regular brown sugar, which I used the same measurement. I thought they might turn out dry as a lot of mini muffins do, but these turned out absolutely wonderful. My kids loved them, and unfortunately - so do I. I've eaten half a dozen already!!! Yummm

Easy to make -- loved them -- made regular muffins instead of the minis. Would add more bananas as the chocolate over powers them a little. Got great reviews from all my friends!
