These truffles are great! They are a little hard to shape because they warm quickly but i just stick them in the freezer for a few minutes to harden them a little more. Everyone LOVES them! I tried dipping them in melted chocolate and then rolling them in pecans and they were DELICIOUS!

Add a teaspoon or two of instant coffee to the cream for a mocha-chocolate truffle. Yummy.

These are so easy to make. I roll them in different coatings and serve them up...usually cocoa powder, powdered suger and finely chopped almonds. They make wonderful Valentine's presents, just roll them in red colored suger and put them in a pretty box.

For such a simple truffle recipe, these come out very creamy. They are easily flavored with a bit of liqueur without losing their texture. I dip mine in tempered dark chocolate and they are highly requested in the office!
